How do I use "peperoncino al miele di corbezzolo"?

I was given a pot of this whilst on holiday in Sardinia, but have not a clue what to do with it. It translates roughly as "honeyed chilli pepper" (where the honey is made from corbezzolo bush pollen).



It seems to be a deep red paste, but I haven't opened it yet.



I wondered whether to try honey roasting a ham with it...

Perhaps, but I think you'll find that it is more pepper than honey.



It's used primarily with sea food. Normally it is served on the side, but occaisonally it is brushed on during cooking like a BBQ sauce.

It sounds like your idea is good. I would use it for chops too, or any roast meat/fish.

Bet it would make a damn good cough remedy too if diluted with hot water.

Reply:Corbezzolo is the strawberry tree plant that you see all over Sardinia and that is used to flavour various delicious Sardinian produce - but what strawberry tree honey would be like, I can't say, especially mixed with chili. I would think that your best bet would be to open the jar and (cautiously, as it's chili) see what the paste tastes like. Then I'd look up recipes I think would be compatible and try them out. But as a general approach I'd say that it would be good with pork (v. popular in Sardinia), but perhaps raosted rather than on a ham. Hope whatever you make is delicious.
